Happy Tuesday! I have the day off of work today, which is amazing. I'm pretty much just relaxing and doing a little housework. I also made a really yummy lunch that you guys will get to see tomorrow!
Yesterday was a more typical eating day for me. Also, I had so much yummy food yesterday. I feel super lucky!
8am: Breakfast was avocado toast with Sriracha, applesauce, and coffee with Silk creamer. Avocado toast is one of my favorite breakfasts. So easy, and super delicious.
2pm: I was absolutely starving by the time I got home from work yesterday. 8-2 is a long time to go without eating anything. Also, I'd been planning on making these lettuce wraps all day, so that wasn't helping! These turned out so well, I was super excited. They're just extra firm tofu marinate in orange sauce, then caramelized in the same sauce, and topped with a homemade spicy peanut sauce. Soooo good. I actually wrapped the third one in a whole wheat tortilla because I felt like I needed some bread.
9:30pm: So last week, before I had really committed to this vegan journey, I told my friend Nick that I would go check out this new pizza place that just opened down the street from Lazlo's, called Mellow Mushroom. I had completely forgotten about it until he asked if we were still going. I was kind of worried I was going to have to just get a salad, or cheat a little by getting regular crust (which might have eggs or butter) but I told him I'd go with him. Well, turns out Mellow Mushroom is SUPER vegan friendly! I was so impressed. They have a special vegan crust, and they have Daiya vegan cheese, which I was really excited about. They also have tofu and tempeh that you can get as toppings on your pizza if you want. So cool! Anyway, I got the vegan crust, tomato sauce, broccoli, spinach, basil, sundried tomatoes, and Daiya cheese. It was amazing and I have lots of leftovers.
